(Kaieteur News) – Everywhere you turn these days is food. Every street corner got curry, roti, cook-up rice, chowmein, fried rice, fried chicken, barbecue, soup and enough fast food to make the average Guyanese wonder if the country quietly become one giant outdoor restaurant.

Dem boys seh you can drive from Georgetown to Diamond and never get hungry. In fact, you might get hungry just looking at all the food. Every few yards somebody got a tent, table, caravan, cooler, car trunk or improvised kitchen serving something hot. Some people cooking so close to the road that the exhaust fumes might be one of the secret ingredients.

And the customers lining up too. Breakfast, lunch, afternoon snack and dinner—all available at the roadside. Some people probably eating dinner at one stand while ordering tomorrow’s breakfast from the next one.

But here is the million-dollar question: Who checking the food handlers’ certificates? Because if all these roadside cooks have the required health certificates, then dem boys seh Guyana must have the most efficient food inspection system in the Caribbean.

You mean to tell me that thousands of people suddenly become certified food handlers and nobody notice? And where exactly are these certificates hanging? Because dem boys don’t always see them.

Imagine if you want open a barber shop, you have to go and do medical to ensure you don’t have no infectious disease. But someone selling food to hundreds of persons each day could do so without displaying their food handlers’ certificate.

The real mystery is not who cooking all this food. We know who cooking. The mystery is who is checking. And that, dem boys seh, is one recipe that definitely needs investigation.
