The Guyana National Bureau of Standards (GNBS) has developed a standard for bread and rolls to ensure that products emanating from bakeries around the country are produced with quality and consistency. The Specification for Bread and Rolls (GYS 192:2000) sets out the requirements for bread and rolls and methods of test for these requirements.
The implementation of this standard is necessary, as consumers are raising concerns regarding the inconsistent quality of bread and rolls that are available in the market. Some of these products, are too hard, too dry, too soft, too raw, easily spoiled, poorly packaged and purely labelled.
The bread and roll standard addresses products prepared by baking the kneaded yeast-leavened dough made by moistening flour with water. These products are classified into groups (bread and rolls), types (soft dough and hard dough) and classes (white, enriched, whole wheat, etc.)
The description and methods of preparation and the ingredients for making bread and rolls are clearly outlined in the standard. In addition, general requirements relating to the finished product such as crust, crumb, flavour and aroma and condition for packing and sanitation are specified in the document.
By acquiring a copy of this standard, bakers and other producers of bread and rolls can also improve the quality and presentation of their products by adhering to requirements for packaging and preparation for delivery, labelling, analysis and sampling.
Finally, the standard outlines procedures for determining volume to ratio of bread and the nutritional content including riboflavin, niacinamide, thiamine and iron content.
