Rum – slaves distilled it, pirates swigged it, and planters knocked it back with a dash of lime and sugar. It became the Caribbean’s most celebrated icon and it is more superior here than anywhere else in the world.
And since it’s Christmas in Guyana we know that ‘tis the season for friends, family, food and of course … rum! So we’ve decided to provide a few Christmas Cocktails for those of you craving something outside of the ordinary.
The Coquito is a traditional punch served at Christmas and New Year’s celebrations. The drink is similar to eggnog with rum. However there’s no need to crack fresh eggs. The preparation time is 10 minutes and the ‘cook’ time one hour. The ingredients are:
· 2 15-ounce cans cream of coconut (or canned coconut milk)
· 2 14-ounce cans condensed milk
· 6 ounces white rum (use less if you like)
· 1/4 teaspoon ground cinnamon
· 1/4 teaspoon ground cloves
· 1/8 teaspoon ground nutmeg
· 1 teaspoon coconut (or vanilla) extract
To prepare you simply mix all the ingredients together in a blender, and refrigerate for about an hour before serving. Expect 36 servings from this recipe.
The Mojito (pronounced moheeto) was born in Havana, Cuba. There are many variations of the drink but this recipe calls for the five customary ingredients of mint, rum, powdered sugar, lime, and club soda. You can find mint in the spice section of any major supermarket in Guyana. The total preparation time for the drink is some 20 minutes. The ingredients are:
· 4 mint leaves
· 1 lime (for juicing)
· 1 teaspoon powdered sugar
· 2 ounces white rum
· 2 ounces club soda
· 1 sprig of mint (for garnishing)
· crushed ice
To prepare the mojito put the drink into a Collins glass which is a narrow tumbler that holds between 8 and 12 ounces and squeeze the lime juice over them. Add the powdered sugar and then crush with a pestle. Add the crushed ice, stir in the rum and top it off with a splash of the club soda.
The West Indian Colada is a typical colada style Caribbean cocktail but adding papaya gives this creamy rum-based drink a special flare. Its preparation is rather simple and takes just 10 minutes to complete. The ingredients are as follows:
· 1 and 2/3 parts white rum
· 2/3 parts coconut rum
· 2 parts pineapple juice
· half of a fresh papaya
· 2/3 parts coconut cream (or canned coconut milk)
· 1 part heavy cream
· 1 cup crushed ice (more or less to your liking)
To prepare the drink peel the papaya half and dice the flesh before placing it in a blender, add the rest of the ingredients and blend until the mixture is smooth. Pour into a colada glass, garnish with a fruit wedge and serve.
The Zombie
This cocktail does have the potential to turn you into a zombie – just as the name implies and many Zombie drinkers can attest to that fact. Debuted at the 1939 World’s Fair it’s still great to zest up a holiday party. The ingredients are:
· 1 1/4 oz lemon juice
· 1 oz dark rum
· 3/4 oz orange juice
· 1/2 oz cherry brandy
· 1/2 oz light rum
· 1/2 oz high-proof dark rum
· 2 dashes grenadine
And preparation is simple, just pour the ingredients into a cocktail shaker with ice, shake well and strain into a highball glass with crushed ice.
We decided to ask the folks down at Demerara Distillers Limited about a few of their favourite cocktails since this is one of their favorite seasons too. Here’s what they gave us:
