The ambiance at the Le Meridien Pegasus was transformed into a Spanish arena on Friday and Saturday evening when the hotel hosted its ‘Mexican Night’ featuring cuisines and cocktails from Mexico.
As persons approached the poolside Friday evening the thought of the Spanish culture quickly flashed into one’s mind even as Mexican music filled the air.
Tortilla chips, tomato salsa, Quesadillas (Tortillas with cheese and chicken), Chilli con Carne (beef with beans), Tequila lime chicken, Pesce veracruzana (fish with olives and jalapenos), Mexican Rice, Kahlua Mousse among many other Mexican food were the featured at the hotel.
But as if the foods from Mexico were not enough cocktails from the Spanish-speaking country were also served.
As persons join the ‘Spanish party’ over the weekend they were greeted by a waitress attired in Mexican outfit, showing them to their tables.
This according to the Chief Chef, Victor Holla, is the build up to Carifesta X, when for the 10 nights of the mega-event foods from various countries will be featured. Each night will be dedicated to a specific country.
Speaking with Kaieteur News, Holla said that he knew that the concept of Mexican night would have fit in well with the Guyanese culture since many of the dishes are similar to those eaten in Guyana.
“Some of the choices were spicy but there was a lot of meat and seafood and lot of corn…Tortillas were a main feature, that is what we call roti here,” Holla said.
Employees from Kaieteur News, who were at the buffet, found the ‘Tequila lime chicken’ the most appetizing.
Holla, who is from Bangalore, India, used to work for a Mexican restaurant and as such his choices over the weekend were not only well selected but cooked to the specification of the Mexican culture.
Margaritas, the typical Mexican cocktail, were featured in various types including Simple, Frozen and Summer Fruit flavoured.
Mid-next week the hotel will be featuring Indian foods with highlights of the Indian culture.
Dances and music from various parts of India will be featured at the Le Meridien on August 20. (Tusika Martin)
